Bourbon Quinoa Pancakes With Chocolate Chunks

Ingredients:

  • 1/4 cup Cornmeal
  • 1 cup Barley Flour
  • 3/4 cup Unbleached Flour
  • 1 cup Quinoa Cereal Flakes
  • 3 tablespoon Maple or Brown Sugar
  • 2 teaspoon Kosher Salt
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Nutmeg
  • 2 Eggs
  • 3 tablespoon Olive Oil
  • 1 1/2 cup Milk
  • 1 teaspoon Vanilla
  • 1 tablespoon Bourbon
  • 1/2  cup Bissinger's 60% Dark Chocolate, chopped
  •  Fresh Blackberries
  •  Real Maple Syrup
  •  Creme Fraiche

Directions:

In a large bowl combine the dry ingredients. In a separate medium bowl combine the wet ingredients. Whisk in the wet with the dry, fold in the chocolate chunks. and cook on lightly oiled griddle until bubbling and flip. Complete cooking and serve with fresh blackberries, maple syrup and a dollop of creme fraiche.

 

Yields: Approx. 12 Pancakes
