Cocoa-Spice Rubbed Beef Skewers

Ingredients:

  •  Rub
  • 5 tablespoon Cocoa Powder
  • 4 teaspoon Ground Black Pepper
  • 3 tablespoon Dried Shiitake Mushrooms, powder using a food mill
  • 1 tablespoon Brown Sugar
  • 2 tablespoon Smoked Paprika
  • 1 teaspoon Chili Flakes
  • 2 teaspoon Ground Cinnamon
  • 1 1/2 tablespoon Kosher Salt
  •  Marinade
  • 2/3 cup Cocoa Spice Rub (use remaining 1/3 cup rub with any other beef recipes
  • 4 tablespoon Vegetable Oil
  • 1 tablespoon Soy Sauce
  • 2 tablespoon Red Wine Vinegar
  • 3 tablespoon Sweet Chili Sauce
  • 1 teaspoon Fresh Garlic
  • 2 lb Flank, Skirt or Top Sirloin
  • 32 6" Skewers
  • 2 tablespoon Sliced Green Onions

Directions:

Blend together rub ingredients. Measure 2/3 cup of rub mixture and add remaining marinade ingredients. Whisk until combined. Cut beef into one-ounce cross grain strips and place in a bowl. Pour just enough marinade to coat beef. Reserve any remaining marinade as dipping sauce. (Be sure to discard the marinade that came in contact with the raw beef as it has been contaminated.) Thread beef onto skewers and heat grill to high. When hot, grill a few minutes on each side until browned and cook to medium. Do not overcook. Remove from heat and brush with reserved marinade. Serve remaining marinade on side and garnish with sliced green onion.
