Q:
When was Bissinger's established?
A:
The history of Bissinger's dates back to 17th-century Paris, where the
Bissinger family began creating delicacies that were enjoyed by European
nobility, heads of state and important historic figures such as Ludwig
of Bavaria and the Rothschild's. Karl Bissinger, the company's namesake,
left France in 1845 and, along with his loyal master candy maker and all
of the Bissinger candy making secrets, settled in the United States near
Cincinnati, Ohio
Q:
How long has Bissinger's been in Saint Louis?
A:
In 1927, Karl Bissinger's son, also named Karl, moved to Saint Louis and
opened the first Saint Louis Bissinger's candy making kitchen and shop
on McPherson Avenue in the Central West End.
Q:
Where are Bissinger's stores located and when are they open?
A:
Visit the Contact Us page
for more information.
Q:
How are Bissinger's confections made?
A:
Just as bread made lovingly by hand is so much better than machine-made
bread, Bissinger's has been handcrafting fine French confections for nearly
400 years. Bissinger's is one of the last chocolatiers in the world to
make candy by hand. Our candy makers stand over small copper pots, combining
the best ingredients available to make the best chocolates available.
Q:
What makes Bissinger's confections so delicious?
A:
Bissinger's confections are handmade with old family recipes. Bissinger's
candy makers have been trained from one generation to another and patience,
listening and love are key skills a Bissinger's candy maker must possess.
In addition, Bissinger's confections are made with the finest ingredients
imported from all over the world.
Q:
What is your most popular candy?
A:
The Signature Classic Collection offers a variety
of flavors and is the best selling collection series. Popular individual
items include Chocolate-Covered Raspberries
and Blackberries, Chocolate-Dipped
Fruit (Apricots and Oranges), and signature candies such as Chocolate
Caramel Lollipops and Molasses Puffs
are among the most popular.
Q:
Why are Bissinger's confections premium priced compared to some other
candy companies?
A:
Bissinger's handcrafts each piece of candy with the utmost care and only
offers candy to the customer when it's perfect. Machine-made candy is
much more efficient, but also requires altering the recipes which results
in altering the taste. Handcrafting is a slower, more expensive process
because of the high cost of labor invested into the production.
Q:
Does Bissinger's make sugar free confections?
A:
Bissinger's makes a variety of its signature items
without sugar and salt including Bear Claws,
Pecan Bark, Cherry
Cordials, Chocolate Almonds,
Solid Chocolate and an Assorted
Box, as well as seasonal items.
Q:
What sweeteners do you use in your sugar free confections?
A:
Bissinger's uses a combination of erythritol and maltitol to sweeten our chocolate, which allows us to make a great tasting, sugar free chocolate with the chocolatiness and velvety mouthfeel you expect from Bissinger's. Although these products are ideal for our customers who want to limit their sugar intake, they may not be significantly lower in caloric value. Our sugar free dark chocolate is made with erythritol and has a lower glycemic index than sugar, minimizes gastric distress and has a prebiotic benefit due to the inulin in the formulation. Therefore, you get the luxurious Bissinger's taste along with the antioxidant properties of dark chocolate. Our sugar free milk chocolate is maltitol-sweetened and lactose free. Although our sugar free products may be appropriate for your nutritional intake, please check with your physician prior to including it in your diet.

Q:
What is the best way to store Bissinger confections?
A:
Bissinger's confections are best stored in a cool, dry area (65° to 70° F), without refrigeration.
Q:
What is bloom?
A:
Bloom is a condition that affects the surface of chocolate, not the taste,
and gives the chocolate a dull, white appearance. The surface of sugar
bloom is gritty and rough to the touch, whereas fat bloom has an oily
or greasy feel.
Sugar bloom is caused by the condensation of water vapor from the air
onto the surface of the chocolate. The sugar in the chocolate dissolves
in the water, causing the water to evaporate and the sugar crystals to
remain on the chocolate.
Fat bloom is caused by the migration of cocoa butter crystals to the chocolate's
surface, which leads to recrystallization. This process may occur when
the chocolate is exposed to warm or fluctuating temperatures.
Q:
When will my credit card be charged?
A:
We elect to charge your credit card at the time your order is placed because the vast majority of our products are made to order. This process insures that your order will be made with the finest and freshest ingredients and with the utmost care.
